Safety first
If you suspect food poisoning with severe symptoms (high fever, bloody stool, signs of dehydration, or symptoms in a very young child, older adult, pregnant person, or someone with a weakened immune system), seek medical care. For a poisoning emergency, call Poison Help at 1-800-222-1222, or call 911 for severe symptoms.
AThe super simple explanation
Refrigerate perishable food within two hours (or one hour if it's above 90°F outside, like a hot car or picnic).
Keep your refrigerator at or below 40°F and your freezer at 0°F.
Store raw meat on the bottom shelf of the fridge to prevent juices from dripping onto other foods.
When in doubt about whether food has spoiled, it's safest to throw it out.
BWhy does this even matter?
- Improper food storage is a leading cause of foodborne illness, which can range from mild discomfort to serious, even life-threatening illness for vulnerable groups.
- Proper storage also reduces food waste by extending how long food stays genuinely safe and good quality.
- Knowing the danger zone and timing rules helps you make quick, confident decisions at picnics, parties, or after power outages.
COkay, how does it work?
DShow me an example
A summer picnic
Potato salad sits out at an outdoor picnic in 95°F heat for two hours.
Because it's above 90°F, the safe window was only one hour, so the potato salad should be discarded rather than eaten or saved.
Illustrative example with made-up people and numbers — not current rates or rules.
EWords you should know
- Danger zone
- The temperature range (40°F–140°F) where bacteria multiply fastest in food.
- Cross-contamination
- When harmful bacteria spread from one food (often raw meat) to another, often via surfaces or dripping juices.
- Appliance thermometer
- A thermometer placed inside a fridge or freezer to verify its actual internal temperature.
FCommon mistakes
- Leaving perishable food out at room temperature for more than two hours.
- Storing raw meat above other foods in the refrigerator.
- Trusting the fridge's dial setting without verifying actual temperature with a thermometer.
- Keeping leftovers far longer than the recommended 3-4 days without freezing them.
GThings to know
- The one-hour rule (instead of two hours) applies specifically when the outdoor or ambient temperature is above 90°F.
- Thawing food safely means using the refrigerator, cold water, or a microwave — not leaving it out on the counter.
- Freezing food at 0°F keeps it safe indefinitely, though quality (taste, texture) declines over very long storage.
HQuick recap
- Refrigerate perishable food within two hours, or one hour if it's above 90°F.
- Keep your fridge at or below 40°F and freezer at 0°F, checked with a thermometer.
- Store raw meat on the bottom shelf to avoid cross-contamination.
- Use refrigerated leftovers within about 3-4 days or freeze them.

Totally optional. Nobody's grading you.
KWhat next?
- 1.Check your fridge's actual temperature with an appliance thermometer.
- 2.Reorganize your fridge so raw meat is stored on the bottom shelf.
